Our blue-labelled coffee is back with an exciting new roast, and we couldn’t be happier! While it’s always a bit bittersweet to say goodbye to the old favourite, we promise that one sip of this fantastic Colombian brew will have you falling in love all over again.

Roasted to a medium-dark level, this zingy coffee is just what you need to kickstart your mornings and get you ready for the day! Let’s take a look at what’s in store.

 

Kipper is out of the bag coffee

The flavours

First, we must focus on the flavours (arguably the most important part!). Let’s start with the base: uber beautiful, smooth, rich chocolate deliciousness, which serves as the perfect start to this flavour explosion.

For a touch of sweetness, a fruity plum zing combined with a sprinkle of brown sugar creates that perfect balance. To top it all off, a zesty squeeze of orange makes this brew an all-round showstopper!

Perfect with or without milk, this is the ideal way to start your day!

Who grew this coffee?

Now, this coffee is quite special, as it has been grown, harvested and processed exclusively by women in the Hulia region, Colombia. Managing 1-5 hectares each, these female farmers are making changes to improve gender inequality in the coffee industry and growing some incredible coffee simultaneously! Wahoo!

Led by Ana Gloria Rodriguez, they have formed an association dedicated to protecting their ancestral lands and the cultural aspects of this region. By adopting sustainable farming practices, they are safeguarding their farms from the devastating effects of climate change. This has led to superior coffee being grown across the board.

This has improved not just their livelihood but their communities, too. The success of smallholder farmers like this brings vital investments to the area, enhancing the quality of life and putting them on the map for having a good reputation for excellent brews for years to come.

How were these beans harvested and processed?

The journey begins by carefully hand-picking the perfectly ripe coffee cherries before they are taken to be floated in large water baths. This process separates the ripe cherries from the underripe or defective fruit. The less dense, underripe fruit will float along with any damaged fruit. These are then skimmed off the top and discarded.

Next, the remaining fruit is de-pulped, separating the beans from the cherries. The collected beans are then fermented for 12 hours before being thoroughly washed and laid out to sundry for up to 15 days until they reach the optimal moisture level reading of 10-12%.

The roasting process

If you’ve been a Two Chimps lover for a while, you’ve probably noticed we don’t have any pure ‘dark’ roasts. This is because we don’t think speciality coffees should be pushed to this level; as they become darker, they lose all those unique flavours and become burnt. And no one wants burnt, bitter coffee (yuck)

This coffee is one of the darkest options we offer, and it has gone through a specific roasting process to ensure we get the rich flavours we want without it becoming brunt. To start, our roaster sets the temperature at 210°C. After around the 13-minute mark, the first crack begins, and the temperature increases by several degrees.

The beans are released into the cooling drum just over a minute later. This is around a minute less than our orange-labelled coffee. This is so we can ensure that acidity is there!

Jordyn joined Two Chimps in September 2023 to start his career in coffee roasting. Since learning to roast the amazing coffee at Two Chimps, he is a firm believer in the stronger roast style and continues to enjoy testing out new coffees from different areas of the world.
