Coffee Topping for Pancake Day
You really can’t beat Pancake Day.
Breakfast? Pancakes! Lunch? Pancakes! Dinner? You guessed it, pancakes! Everyone has their ‘pancake routine’ right? Do you start with the classic lemon juice and sugar, then build up to the three cream eggs, chocolate sauce and marshmallows? What if you could add something with coffee into the mix? A coffee pancake, imagine that!
Well, we have done just that. Below is a very simple recipe to make a coffee pancake topping. This topping is light, sweet and delicious.
So, let’s waste no more time… Coffee at the ready? Let’s do this!
Ingredients
• 255g Double Cream
• A whole bag (319g) Marshmallows
• 1 mug of freshly brewed Two Chimps Coffee (Americano, Filter or Cafetiere with no sugar or milk)
You will also need a pan and an electric whisk.
Instructions
To start, pour your coffee into a saucepan and bring to the boil.
Once boiled, remove from the heat briefly to add in the marshmallows.
Put the saucepan back on the heat and leave for 5-6 minutes or until the marshmallows have melted.
Pour the mix into a large bowl and refrigerate overnight.
The following day:
Your refrigerator mixture should have a consistency slightly thicker than jelly.
In a separate, smaller bowl, pour your cream and whisk until soft peaks begin to form.
Add one tablespoon of cream and begin to mix this in. Slowly add the rest of your cream in leaving a spoonful or so for decoration.
Just a quick warning, this can get pretty messy so make sure you haven’t got your Sunday best on!
Once mixed, spoon into small dishes, espresso cups or use straight out of the bowl! With the cream left over, spoon on top of the mixture and add coffee beans for decoration. Voila, a sticky and sweet coffee whip sensation.
This creamy, smooth and sweet coffee topping is sure to bring a whole new flavour to your pancakes.
Time For Pancakes!
Although we’re pretty awesome at roasting coffee beans, making pancakes is undoubtedly not our strong point. With this in mind, we headed over to The Larder in Oakham who whipped up some of their delicious American style pancakes to go with our topping.
Firstly, we tried the pancakes with the topping in a pot to the side. This was amazing for dipping the freshly cooked pancakes, meaning we could add as much as we wanted.
Secondly, we stacked the pancakes and used the topping as a ‘sandwich’ filler. Check out our stack – it very nearly toppled! We LOVED this! So much coffee topping! Nomnomnom.
