Where is this coffee sourced from?

This uber-beautiful coffee was cultivated in Sironko, Uganda, on the slopes of Mount Elgon. The name “Sironko” translates to “solace” and “peacefulness,” a reflection of the region’s history. Centuries ago, a tribe was saved from famine by the river that flows through this region. This area was then honoured with this name to symbolise the relief it provided.

Mount Elgon is an extinct volcano and one of Uganda’s oldest physical features (at least 24 million years old!), once the highest mountain in Africa. Whilst it is no longer active, the soil is full of volcanic nutrients, perfect for growing Arabica coffee.

Combined with its varying altitudes between 1500-1900 metres above sea level, the beans are able to ripen slowly, prolonging the period of the beans infusing with the fruity flavours from the cherry flesh. This is one of the reasons why this coffee has gained that all-important speciality grading.

What does it taste like?

This incredible coffee is packed to the brim with flavours guaranteed to make you swoon. Roasted to a medium level, a caramelised brown sugar base is complemented by a subtle hint of almonds, which add the perfect hint of buttery nuttiness. To finish, a zesty squeeze of satsuma balances everything out. Ready to fall in love?

What is the process from cherry to cup?

These beans have been grown using expert farming methods following GAP (Good Agricultural Practices), passed from farming communities over generations. The Sironko Washing Station has also passed on sustainable farming techniques and has programmes for youth empowerment, encouraging community involvement. Alongside financial assistance, they have helped to fortify these communities against climate change and have created long-term sustainability for the economy for years to come.

The coffee cherries are hand-picked when perfectly ripe before being processed at the washing station. On arrival, they are floated in large water tanks, which separate the under-ripe from perfectly ripe. The denser, riper fruit will sink, while the lighter and underripe fruit floats. The floating cherries are skimmed off the top and discarded.

The cherries are then de-pulped and fermented using the anaerobic method. This involves leaving the beans in large tanks in the absence of air to ferment naturally.

Once complete, they are removed from the tanks, washed, and placed on large raised African beds to bask in the sun until dry. They are then bagged and shipped to us, where our artisan roaster works magic to make this unique brew!

Charlotte joined Two Chimps after completing her BA Hons in Graphic Communication and Illustration at Loughborough University. She also earned two diplomas: Art and Design Foundation and Professional Studies.
