Freshest Coffee is the Best Coffee
Here at Two Chimps Coffee, our ethos is, and always will be that ‘fresh coffee is best’.
This is simply because the fresher the coffee, the better the taste. We roast our subscription coffee by hand and in small batches to ensure this. There are other things we do to make sure we are roasting and delivering the freshest coffee. Read on to find out more.
The Raw Green Beans
When ordering green coffee beans, we order coffee from smallholders and cooperatives, using a UK based trade house, or importer. This does mean that our coffees change from time to time, but it also ensures that we only order enough that can be roasted in a sensible time frame.
If we ordered coffee by the container, it could take us longer than we would like to roast. This could mean that the coffee we roast could have lost its natural flavours, and we definitely don’t want this.
Roasting
When roasting our coffee, we only roast in small batches. This means that we don’t hold much in the way of roasted coffee stock. This ensures that each bag of coffee is fresh, and only roasted when it needs to be.
Every bag of our coffee sports a sticker showing you who roasted it and the date it was roasted. It also includes the weight of the bag and the grind size for reference. This way you can be sure you are drinking the freshest coffee. This also helps if you have a coffee subscription with us by making sure you finish one bag before moving onto the new one.
Packaging
When we receive green coffee beans, they are packaged in a hessian sack lined with a plastic grain pro sack. This lining keeps the beans freshest while they complete their journey to us. Once our coffees have been roasted and are ready to be packaged, they are weighed into our stand up resealable pouches, or into larger, heat-sealed bags designed for coffee shops and hotels. These bags are sealed to keep the aromas and freshness in the bag.
On all of our coffee packaging, you will find a one-way valve which allows the gasses to be released from the coffee but keeps the oxygen out. This valve helps to keep the coffee fresher for longer.
When fresh coffee arrives with you
When your order of fresh coffee arrives with you, there are a few ways you can store it to make sure you are keeping it at its best. For instance, we would recommend for you to keep your coffee somewhere cool, but not in the fridge or freezer. We would also suggest that you keep your coffee out of direct sunlight too.
When you have used your coffee to brew, make sure you reseal the bag or close the tin. This will slow the oxygen attacking the freshness.
And Lastly, rather than ordering in bulk, order little and often. By doing so will ensure you always have the freshest coffee possible. Check out our blog, ‘How to Keep Coffee Fresh’, for tips and tricks.
Wholesale
To make sure our wholesale coffee customers are serving the freshest coffee possible, we deliver fresh coffee to them every week. Toward the start of the week, we contact them directly for a coffee order. This order is then hand roasted before it is delivered; usually by hand.
Stock rotation is critical for wholesale coffee customers to make sure the older coffee is being used first. As mentioned, each bag of coffee that is freshly roasted sports a ‘roasted on’ sticker, making stock rotation a doddle.
Ground coffee
Coffee that is stored in whole bean will always stay fresher than pre-ground coffee.
If you think about it, this does make sense. One coffee bean has the surface area of let’s say two cubic centimetres. Only this surface is open to the elements, the rest of the bean is hidden away by this outer layer. If we grind the same bean, we now have lots of tiny pieces, all with their surface area. If we now have ten cubic centimetres (you are welcome to try and measure!) the oxygen can attack five times more bean at the same time.
With this in mind, if ground coffee for a particular brewing device is required, we grind the coffee to order minutes before it leaves us. This way, the coffee ordered will be the freshest it can be when it arrives.
Freshest coffee is best
As mentioned, we recommend to purchase coffee from us using a ‘little and often as you need’ approach, rather than in bulk. This ensures that the coffee drunk is always the freshest it can be.
For instance, we would recommend one 250g bag of coffee a week, rather than ordering a 1kg bag a month. Granted, this does sound like a lot of ordering, but with a coffee subscription from Two Chimps Coffee, everything is taken care of automatically. You can even pause your coffee subscription if you need. How cool is that?
