The Times They Are A-Changin’

Yes, after clocking up multiple air miles, we must bid a fond farewell to our Baboon In An Air Balloon and welcome to the Tree House Auntie Mary’s Green Canary, our latest beautiful Brazilian coffee.

Another Brazilian Banger

Hailing from the Cerrado Mineiro region of Brazil, this canary has the smooth timbre of chocolate-coated hazelnuts, resonant with overtones of dried fruit and a crisp apple top note to rival Mariah Carey’s whistle register.

Treated to a gentle medium roasting that adds body whilst maintaining clarity, Auntie Mary’s Green Canary is a beautifully balanced brew, amazing at any time of day.

Auntie Mary Says Green Is Good

Head Chimps Andy and Laura were gifted their very first paper tape machine by Great Auntie Mary (thanks Auntie for helping us be green). So we named a coffee after her. Plus, she has a canary, doesn’t every Auntie Mary!?

Cerrado Mineiro Calling

First cultivated in the 1970s, Cerrado Mineiro coffees benefit from the area’s mineral-rich soil and a climate that provides plenty of water in the growing season but stays dry at harvest time, allowing for a consistent drying process. Covering 55 municipalities, Cerrado Mineiro was the first region in Brazil to earn the prized Denomination of Origin.

Café Delas

This Brazilian coffee is part of the awesome Café Delas Programme, which means it has been cultivated by skilled women farmers. The programme is founded on the principle that given better access to resources and an equal voice in leadership, women farmers produce fantastic speciality-grade coffee whilst creating many positive impacts within their communities.

Developed by amazing speciality coffee suppliers Covoya Coffee, Café Delas can be summed up in one word, “empowerment”. Using the Women’s Empowerment in Agriculture Index (WEAI), Café Delas looks to improve women farmers’ ability to make decisions related to agriculture, as well as their access to the “material and social resources needed to carry out those decisions.”

Every sale of this coffee means money is invested in programmes promoting gender equality and female empowerment. Great coffee that makes the world a better place. What more could you want?

Out with the old pink, in with the new pink

No coffee lasts forever, and no two harvests are ever the same. Whilst we love this diversity, it means we can’t roast exactly the same coffee all year every year. Nor would we want to. We buy seasonally and roast regularly in small batches to ensure every bag of Two Chimps coffee is at its best when it arrives in your hands.

But this does mean your favourite coffee won’t last forever. Enter the TC colour system. We scour the speciality coffee world, searching for great coffees with similar characteristics to the current range. When we finally say farewell to one pink, we have a new, equally awesome coffee ready to take up the mantle. So, if our aeronautical ape refreshed the parts no other coffee could reach, don’t worry. This green canary is a more than worthy successor.

Time for a brew

Now you know all there is to know about Auntie Mary’s Green Canary, it’s time to head to our web store and grab yourself a bag!

Or you can visit the roastery and pick some up in person.

Happy brewing!
