It’s that time again, folks! We are so excited to have a new decaffeinated coffee on offer, and this one is a real beauty. It is packed with all those amazing flavours you can only find in speciality coffee. Think silky chocolate, sweet raisins, and a hint of honey. It’s seriously awesome and totally drool-worthy!

Where is this coffee from?

These beans were cultivated on El Tucan farm in the Chiapas region of Mexico. Bursting with rich coffee culture, Mexico represents 2% of the global production of coffee after Spanish Colonists first introduced it in the 18th century. The natural qualities of Mexico proved invaluable in growing high-quality beans and became a significant source of income for the country.

The Chiapas region has become the major region for coffee production in Mexico, which is precisely where these beans came from! With rich biodiversity, healthy soil and an ideal climate, it boasts a high percentage of speciality Arabica.

How are these beans decaffeinated?

These beans have been decaffeinated by using mountain water to remove the caffeine molecules. This fascinating process uses no chemicals and utilises the natural resources of the Pica de Orizaba, the highest mountain in Mexico.

They collect this water and mix it with the green coffee beans, allowing them to soak for a period. During this, the caffeine leaches into the water, almost like when you boil vegetables. Was anyone else always told to save the vegetable water for soups or gravy, as this is where many of the veggie nutrients end up? It’s kind of like this!

The water is then sent through a filtration system, which sees 99% of the caffeine molecules removed- but don’t worry, this doesn’t affect the flavour in the cup. One of the best things about this decaf process is that it retains all the aromas and characteristics of the coffee.

Next up, the beans are removed and dried to the optimum moisture levels before being bagged and shipped to us at Two Chimps HQ!

What flavours can you expect?

When we say, ‘This decaf tastes like the real deal,’ we aren’t joking! Thanks to the lack of nasty chemicals, our decafs always taste tip-top, and this one is no exception. Starting with a creamy milk chocolate base, this brew has a sweet raisin twist, complemented by a cheeky drizzle of honey. It’s the perfect solution for a late-night coffee craving (we’ve all been there!)

Charlotte joined Two Chimps after completing her BA Hons in Graphic Communication and Illustration at Loughborough University. She also earned two diplomas: Art and Design Foundation and Professional Studies.
