Where was this coffee grown?

We sourced this coffee from the Chiapas region of San Cristóbal de las Casas in Mexico. In this colonial area, 44% of the population is indigenous, specifically Tzotzil. They live a traditional way of life, and the city consists of beautiful houses with tiled roofs, a Cathedral, museums, and a textile centre.

The locals wear traditional clothing, with the men dressing in shorts tied with a red fabric belt and a long shirt. Some may also wear leather huaraches (sandals) and hats decorated with ribbons. The women will typically wear a red skirt or blouse and use traditional shawls to carry their babies.

Nestled in a breathtaking panorama of mountains, the area is naturally picturesque and popular amongst tourists. From national parks to waterfalls, it is the perfect way to immerse yourself in nature.

The Mexican government has named areas like this Pueblo Mágico or ‘Magic Town’. This is to acknowledge that the region is bursting with symbology and transcendent history, which in turn represent and retain the country’s heritage and national identity.

How was this coffee processed?

Only the best cherries are selected to create this speciality brew. They are hand-picked by farmers on small co-operatives before being de-pulped. The beans are then left to ferment for 12-17 hours before being thoroughly washed. The beans are then laid out to dry on small patios outside the farmer’s homes.

The Chiapas area has a long history of coffee growing, with it being a significant source of income for these small producers. Despite its unpredictable weather conditions due to a varying altitude, the soil is extremely fertile which supports a wide range of agriculture. Ultimately half of the local population makes a living from growing bananas, mangos, sugar cane and, of course, coffee!

Over time, producers have perfected their techniques to ensure a high-quality harvest. This has given coffee from this region a strong reputation, with it typically creating a very clean cup with notes of caramel, nuts, and chocolate.
