Fancy a no-bake coffee slice? A tasty, peanutty cake for quick caffeination? Of course ‘ya do! Jam-packed with cocoa, oats and freshly made espresso coffee, these are a mid-morning snack no one will decline!

And, with all those oats and peanut butter, this tasty mocha slice is basically a health food. Well, compared to a triple choc brownie, anyway…

What is a Coffee Slice?

Whip up this coffee slice recipe, and get ready for a plate of yum! Because these energy-packed bars are next-level delicious.

Combining a nutty, no-bake espresso base with sweet coffee topping, these tasty bars treat you to flavour in every bite. The coffee chocolate base rocks serious mocha vibes, while the oat biscuits bring bucketloads of crunch. The espresso glaze is a handy recipe to have up your sleeve – use it to top your favourite bakes and bars! It includes butter, so sets a bit firmer than your standard glace-style glaze. This makes it less sticky, too!

How to Make No-Bake Coffee Slice

Things start off crunchy with a biscuit-studded base. You make this simply by bashing up oat biscuits and combining them with oats (see – healthy!), icing sugar and cocoa, plus a couple of melted ingredients. The result is something that looks like chocolate rubble and tastes 100% delicious. And yes, we were eating the mixture straight from than pan…

You leave this to set before topping it with an easy espresso glaze. No lengthy ingredient lists here – just mix together butter, espresso and icing sugar and you’ve got a scrummy coffee glaze!

No need to head to the shops – we bet you’ll have most of the ingredients at home!

The biscuits are key for a coffee slice crunch factor. We used the Dark Chocolate Chip Oat Biscuits from Nairn’s because they’re super crisp and packed with wholegrain oats. Don’t bash them to smithereens at the biscuit-bashing stage – it’s a good idea to leave a few chunkier pieces for texture.

The peanut butter and butter are the binding ingredients in this coffee slice recipe. You can use crunchy peanut butter or even almond butter if you prefer.

And what brings the mocha magic to these moreish bars? Chocolate and coffee, of course! Combining quality cocoa powder with irresistibly fresh Two Chimps coffee makes this a mocha slice to die for!

Coffee Slice Recipe

 

You will need…

For the bars

  • 120g smooth peanut butter
  • 80g unsalted butter
  • Double shot espresso or 50ml very strongly brewed coffee
  • 100g oat biscuits or oat choc chip biscuits (10 biscuits if using Nairn’s Dark Chocolate Chip Oat Biscuits)
  • 65g oats
  • 1/4 tsp salt
  • 140g icing sugar
  • 30g cocoa powder

For the coffee glaze

  • 35g unsalted butter
  • 1 shot espresso
  • 230g icing sugar

Method

Line a 17cm square tin with baking parchment

Melt the peanut butter and butter together in a saucepan over a low heat. Then stir in the coffee

Crush the oaty biscuits so that about 2/3 are like rough sand and the rest are chunkier shards

Combine the crushed biscuits, oats, salt, icing sugar and cocoa powder in a bowl and mix

Pour in the melted butter and peanut butter and mix until everything is coated

 

Tip the mixture into the lined tin and press it down well. Pop in the fridge or freezer while you make the espresso topping

Melt the butter and coffee in a microwave or in a bowl over a pan of gently simmering water. Remove from the heat when melted, then sift in the icing sugar. Beat well. The icing should be quite thick, so sift in some more icing sugar if it looks runny

Spread the icing over the bars and chill in the fridge until set

When the icing is firm, lift the slice from the tin and cut into squares. Dive in!
