Espresso and Walnut Cake with Two Chimps Coffee

Here at Two Chimps Coffee, we’re pretty awesome at roasting coffee. However, something we may need a bit more practice on is baking cakes… Luckily for us, one of our customers has awesome cake making down to a ‘T’.

Off The Beaten Path in Melton Mowbray bakes fresh cakes multiple times each week and every week to serve to their customers. One of which is an espresso and walnut cake in which they add their very own Two Chimps Coffee blend, ‘The Beaten Blend’. Take it from us; this cake is seriously yummy.

What’s more, the team at Off The Beaten Path have shared their recipe with us so that we can share it with you! Read on for an Espresso and Walnut Cake masterclass.

Their recipe includes:

For the cake

  • 350g of Stork margarine
  • 350g of caster sugar
  • 6 free range eggs
  • 350g of self-raising flour
  • 2 teaspoons of baking powder
  • 10-12 espresso shots of Two Chimps Coffee.

For the icing

  • 250g of Stork margarine
  • 500-600g of icing sugar
  • 8 espresso shots of Two Chimps Coffee

 

Now for the good bit. Let’s see how it’s done.

Cake instructions:

Firstly preheat your oven to 160 Degrees Celsius.

While the oven is heating, grease and line two 11 inch cake tins.

Next, cream the Stork margarine and the caster sugar together.

Add in the eggs one by one, whisking in between until slight bubbles form on the surface.

Next, sieve the self-raising flour and baking powder into a separate bowl.

Pour your espresso.

Now, alternate adding the flour mixture and the espresso to the egg mixture until it is all combined.

Pour half the mixture into each cake tine and bake for 30 – 35 minutes.

 

Icing Instructions

Once ready, leave to cool.

Cream the Stork margarine and icing sugar together, along with the espresso. Keep going until the cream filling is thick but nicely spreadable.

When cooled, slice each layer of cake into two. Sandwich together with the icing and ice the top.

Decorate and voila! We have it on the highest authority that a slice of this goes well with a rich and creamy Cortado.
