Vanilla. It’s such a beautiful flavour. Sweet like marshmallow and ever-so-slightly fragrant, vanilla is the perfect pairing to many of our favourite flavours. Including our go-to summer drink – the iced latte!

Vanilla iced lattes are a staple on all good coffee shop menus. They’re lovely and refreshing on sunny days but are equally good all year round. Because something this tasty shouldn’t be kept to summer!

Most shop-bought vanilla lattes are flavoured with artificial syrups. We’re not keen on that vanilla-cum-e-number taste, so found a nifty way to make vanilla syrup at home. It’s subtle, sweet and wonderfully versatile – why not try swirling it into yoghurt or mixing it with your Earl Grey? The syrup keeps for a month in the fridge, so you’ve got plenty of time to experiment!

Just a quickie before we get to the recipe… some handy top tips for making iced lattes!

Firstly, do make sure you use espresso or another strongly brewed coffee. Remember that the ice will melt, so you need that extra caffeine kick to offset the dilution. Fancy an iced latte with even more boost? Try using ice cubes made from coffee rather than water. Or cool down with an indulgent coffee float – just top your vanilla iced latte with a big scoop of ice cream. Flake optional (but recommended!).

Iced Vanilla Latte

Ingredients

  • 250g sugar
  • 2 tbsp natural vanilla extract
  • 2 espresso shots or 60ml strong coffee
  • Handful of ice
  • 100ml milk of your choice (hazelnut is especially delicious)

Method

Start with the homemade vanilla syrup. Place the sugar in a pan with 250ml of water. Bring to the boil and heat, stirring occasionally, until all the sugar has dissolved. This should take about five minutes. Remove from the heat and leave to cool completely.

Add the vanilla extract to the sugar syrup and stir. Store in the fridge.

Now, make the iced latte. Make your double espresso or brew your coffee in your chosen coffee device. Add 2 tbsps of the vanilla syrup.

Add the ice to the glass and pour in the strong, vanilla-flavour coffee.

Pour in the milk.
