Two Chimps Mocha Banana Loaf

That’s when some genius decided to make a cake out of them! Unless you already have overripe bananas lying around then it is a slow process waiting for them to reach the perfect point; The skin is almost black all over and the house stinks of bananas!

We wanted to make a yummy banana bread which incorporated our coffee. We know that chocolate banana bread is delicious so why not make it into a Mocha banana bread?!

As well as our hand roasted speciality coffee, we also stock Hot Chocolate Flakes. Made with 71% cocoa, when steamed together with milk make the most delicious mug of rich, creamy hot chocolate, so why not put it in a cake too!

Well, I can confirm that the results were superb. This recipe is so simple and quick to make, try it for yourself!

 

Ingredients

  • 4 very ripe bananas (About 330g once peeled, roughly chopped)
  • 250g self-raising flour
  • 75g golden caster sugar
  • 2 free range eggs, beaten
  • 50g Two Chimps Hot Chocolate Flakes
  • 2 double espresso shots of Two Chimps Coffee of your choice (About 70-75ml coffee as strong as you require)
  • 85g unsalted butter, melted
  • A pinch of salt
  • 50g dark chocolate, chopped into chunks (Optional)
  • 1 tbsp finely chopped stem ginger (Optional)

Here’s what you do

To start

Preheat the oven to 170c degrees or gas mark 5.

Line a loaf tin with greaseproof paper, about 8.5×4.5inches.

Put your bananas into a mixing bowl along with the sugar, eggs, coffee, hot chocolate, stem ginger (if using) and salt and mash it all together until thoroughly combined. I used a fork for this.

Next, add in the melted butter and stir well.

Add the flour and mix until well combined. I stuck with the fork for this too. Saves on the washing up!

Once your cake mixture is ready, pour it into your lined loaf tin. If using, sprinkle your chocolate chunks onto the top of the cake mixture. Bake for about 1 hour.

To test whether the cake is done, insert a skewer into the middle part of the cake. If the skewer comes out clean, then the cake is done. If it comes out with cake mixture on it, then pop it back in for 5 minutes and check again. Continue to check this way until your cake is done.

Remove the tin from the oven and place on a wire cooling rack.

After about 5 minutes, remove the loaf from the tin, remove the greaseproof paper and allow the loaf to cool on the rack until completely cool.

Once cool, cut it into slices and serve!

Top Tip!

If you want a more chocolatey bread, then mix your chocolate chunks into the mixture, once you’ve added your flour, and mix well. This will give you lovely pockets of chocolate through each slice.

Serving Suggestion

This can be eaten cold paired with a delicious cup of Two Chimps Coffee or Hot Chocolate, however, if you like it warm, put a slice in a bowl into the microwave and heat on full power for 10-20seconds. Carefully remove from the microwave and stick a dollop of ice cream or cream on top. Mmmmmmmmmmmm!
