Behind the Scenes
These amazing beans come from the hard work of ASOPROAAA, a group of coffee producers in El Cedral, Costa Rica. They are dedicated to growing top-quality coffee while helping farmers receive fair pay and promoting sustainable practices for a better future.
They manage a collection of farms, owning 20 hectares themselves. A permanent team of six employees focuses on preserving these plots, with areas dedicated to experiential coffee growth, which leads to the development of unique flavours. Combined with good farming practices, these tend to score high and reach that all-important speciality category.
These beans were grown in a forested area at an altitude of 1700 metres above sea level. This is an excellent example of agroforestry, where they deliberately integrate trees in crop plots to provide shade. This allows the fruit to grow and develop slowly, which means the beans inside have more time to infuse with the flavours of the cherry flesh.
Once the cherries have been carefully hand-picked, the fruit is transported to the local processing station in Potrerillos, which sits at an altitude of 900 metres above sea level. The cherries are then spread across patios to bask in the sun for 8-12 days until dried. This process is under the watchful eye of ASOPROAAA employees, who check the fruit is drying evenly. Once complete, the beans are removed and packaged in large sacks to await exportation. We then roast them to perfection, creating this incredible limited-edition brew for you to enjoy!

We don’t need to fix any flaws, and we certainly don’t want to replace those awesome origin characteristics with the flavour of roast. So, we work carefully to ensure you can enjoy every bit of the amazing flavour this coffee has to offer.
