    If you know us, you know we’re all about exploring coffees with unique and exciting flavours, and this Next Level Coffee is no exception. In fact, this is the first coffee we’ve ever roasted from South Sudan so we’re going all out this time around!

    In addition to trying somewhere up and coming, we’re changing up our flavour profiles, too, and embracing the fruity and nutty notes that South Sudan is becoming famous for. Delicious floral aromas of Chamomile are complemented by delicious fruity flavours of crisp green apple, sweet, sweet honey and lip-smackingly tasty pecans to finish. Trust us, you don’t want to miss this limited edition.

  • What does 'Next Level Coffee' mean?

    Our Next Level coffees are designed to be just that. We don’t take limited editions lightly, so when we call something a Next Level coffee, we go above and beyond what you might expect.

    Coffee producers, Equatoria, have used the Excelsa varietal, a resilient and disease-resistant species, which is native to South Sudan and thrives in the climate with its unpredictable rainfall. That means this coffee has been planted, grown and harvested in the country with no outside influence, giving the local smallholders something they can be proud of – and giving you a delicious and NEW treat.

    This is a little piece of history for Two Chimps, and you won’t want to miss out. If you’re searching for something truly unique to transform your cup, this is it – our first ever coffee from South Sudan!

  • Behind the scenes

    This is the first time Two Chimps has had coffee from South Sudan, and we’re really excited to bring it to you and see what you think!

    Equatoria, who produced this coffee, have been working hard for a number of years to re-establish coffee farms in South Sudan, and this is the first of their shipments to arrive in the UK.

    Like us, Dr Aaron Davis, the head of coffee research at Kew Gardens, became interested in the Excelsa varietal that Equatoria were cultivating and traced Equatoria’s Excelsa trees back to 1919 (a great bit of research that helped us come up with the name for this coffee!).

    Equatoria have used anaerobic fermentation processing (which involves sealing the coffee cherries in airless tanks to remove the carbon dioxide and usually gives the final coffee a punchy flavour.

    By giving local farmers the skills and seedlings they need to start a smallholding and grow crops to sell, Equatoria is revitalising an industry that once boomed in the country but has, unfortunately, been destroyed by conflicts in recent years.

    In the Nzara and Yambio regions of the country, Arabica thrives. The lower-lying lands are preferable for higher-quality coffee beans, and Excelsa in particular, which is climate-, pest-, and disease-resistant.

    That is why Equatoria has chosen this area and why this Next Level coffee is so highly rated. They set up in Nzara in 2006 and immediately provided employment opportunities, albeit in teak, but revenue was required for these farmers, and coffee soon became the logical source. Smallholders have been able to cultivate their crops, harvest them, and now, with the help of Equatoria, sell them around the world.

  • What does the score mean?

    Cupping is the process used to allocate any coffee its ‘quality’ score. Here at Two Chimps, we only source and roast speciality coffee. Speciality coffee must have a score of 80 points or higher.   • Roasting

    When it comes to Roasting, we never ‘over roast’ any of our coffees, because we never need to. We use the roasting process to highlight some of the amazing flavours and aromas that can be found within the coffee naturally.

    Roasting coffee too dark hides these wonderful flavours and creates a coffee which is bitter and burnt. Because the coffee we source is of a very high quality, we can roast to highlight flavours, rather than to hide them. Our coffee is never bitter or burnt. Instead, our coffees are naturally sweet (not like two sugars sweet, just naturally sweet) and bursting with character.

    Each coffee we source is amazingly individual. Some are more acidic, some chocolatey, some are even fruity. The farmers and workers across the globe work hard to produce a superb product, always trying different techniques to produce the holy grail of coffees. We feel we owe it to them, and to you, to get the most flavour and aroma from every single bean.

  • Where does the name come from?

    A lot of hard work has gone into restoring coffee production in South Sudan, and we wanted to thank the grafters behind the scenes with a bit of a hat-tip. Dr Aaron Davis, Head of Coffee at Kew Gardens, took an interest in South Sudan’s native varietal – Excelsa – and managed to trace the trees right back to 1919. Hence the name!
