Behind the Scenes
This coffee comes from Sironko, Uganda, where it has been carefully grown, harvested, and processed on the slopes of Mount Elgon. The name “Sironko” means “solace” and “peacefulness” and was named this by a tribe that once found relief from famine thanks to a river in this area.
Mount Elgon is an extinct volcano providing farms with nutrient-rich volcanic soil. The combination of abundant rainfall and plenty of sunshine creates ideal growing conditions for high-quality Arabica coffee, which has become a booming industry for the local population in the area.
These beans were fully washed at the Sironko Washing Station, which sits 1,250 meters above sea level on the slopes of this mountain. They have trained local farming communities in Good Agricultural Practices (GAP). This training not only enhances the health of the crops but also improves the yield and quality of the coffee produced.
They are working to enhance gender equality by providing youth empowerment programs specifically for young women. This includes conducting workshops and encouraging community involvement. Additionally, they offer financial assistance by helping establish savings and loan groups for farmers, contributing to the economy’s long-term sustainability.
Once hand-picked, the cherries are taken to the washing station, where they are floated to separate the under-ripe fruit from the perfectly ripe ones. After de-pulping, the beans undergo anaerobic fermentation before being washed and dried on raised African beds.

What does the score mean?
Take a peek at your fresh coffee’s cup score (it’s the one out of 100). Is it below 80? Then it’s a commodity coffee. 80 points or above? Then you’ve got yourself a bag of super-delicious, entirely defect-free speciality coffee!
Speciality coffee is the coffee crème de la crème. The top dog. The best of the bunch. It’s cherries are picked by hand at perfect ripeness, it’s flavours are interesting and naturally sweet… it’s the only coffee your mug deserves!
But, watch out. Don’t choose your coffee based solely on its cup score. Remember – this mark is only the opinion of the Q Graders who cupped that coffee. A lower-scoring coffee might taste less avant-garde, but its flavour profile might be just what you’re after! Play around, try different tastes, and go with the coffee you prefer!
Each coffee in our Two Chimps range sits in the 80-90 points range. We tend to avoid coffees with scores in the high 90s, as this often indicates a very, very rare coffee rather than one we know you’ll love!

Roasting
We never ‘over roast’ our coffees. Not ever. Instead, we use the roasting process to show off all the natural flavours and aromas within your coffee.
Big-name commodity roasters often use the roasting process to mask undesirable flavours in low-quality beans. Overroasting (when coffee is roasted too dark) gives the coffee a bitter and burnt taste. So, essentially, they are replacing foul tastes with bad ones. Not what you want, is it?
